Personally I don't think there is a certain mockingbird. I think that is just an application of the theme.
Towards the end of the book I find that Boo could be symbolized by the mockingbird.
I lied its Boo.
There are some mockingbirds in the story. They are just people who are harmless and inoocent but in a way get harmed by the society because of prejudice and etc.
Two obvious ones are Boo and Tom. You may also think of Jem and Scout as they are innocent but yet they are attacked by Bob.
It just depends on how you look at it.
